The addition of ACAIA to our range of products confirms our commitment to promoting ecological cultivation methods and biodiversity. ACAIA olive oil is obtained from the Kolovi olive variety native to the Greek island of Lesvos. It is only on Lesvos that this variety is used on its own to make characteristically mild and fruity olive oil with excellent harmony and a distinctive fruity flavour. ACAIA’s richly complex aromas evoke the freshness of leaves, s, grass and apples. The island’s ainous terrain and Eastern Aegean Sea climate combine to make Lesvos a botanical paradise. They also ensure that the olives used to make all our ACAIA oils grow under the best natural conditions, without the use of s. Here at ACAIA, we use olives harvested early in the season, while they are still green. Our olives are picked with hand-held tools and carried to the road on mules for delivery to the mill. The olives are pressed within a few hours of picking in order to preserve the ents and flavours.
